Everyone loves sushi…

Sushi is probably the specialty of Japanese cuisine that is best known internationally. From New York to Berlin, sushi restaurants can be found all over the West, and of course many take-away stands and even supermarkets now also offer sushi. Sushi has captured the culinary enthusiasm of many people, because the small delicacies are not only something very special in terms of taste, but also convey a fascination in their artistic preparation and the fine little details around them, which has earned them many fans.

Even though fish (and especially raw fish) is not everyone's cup of tea, sushi is also interesting for those who don't like fish or who are vegan or vegetarian, because there are also vegetarian versions of sushi.

Organic sushi ingredients for the perfect sushi enjoyment at home

Sushi isn't just for restaurants... If you prefer to enjoy sushi in your own home and want to go for organic, you'll find a variety of important organic ingredients at ALLBIO. Whether you want to create a whole sushi plate from A to Z yourself or buy sushi from outside and only want to have the extras such as sushi ginger, horseradish or wasabi paste on hand - you'll find everything you need in the ALLBIO range.

Not all rice is the same - there are many different types of rice, each with its own distinct characteristics. Traditionally, sushi uses a sticky, short-grain rice that swells well - so rice varieties are chosen that absorb a lot of water and whose grains stick together well. If you use a non-typical rice for sushi instead, such as long-grain rice or basmati, you won't have the usual sushi experience, which simply includes the special rice consistency, and you will have problems getting the sushi rolls into the desired shape without them falling apart. It is therefore worth choosing a rice specifically made for sushi, rather than just any rice.

Sushi ginger

The refreshing, slightly lemony spiciness and the unmistakable aroma of ginger are typically part of sushi. However, fresh ginger is not usually used for sushi, but rather - as most people know it - pickled ginger, which is cut into thin slices and refined with a seasoning sauce. The manufacturer Arche also offers sushi ginger: finely cut and pickled in lactic acid, seasoned with sea salt and rice sauce and combined with shiso leaves (the herb Perilla frutescens).
Sushi ginger is what makes the sushi experience truly authentic. In Japan, the sweet and sour delicacy is called “gari.”

Wasabi

Japanese horseradish or water horseradish is an ingredient that most fans of the Japanese delicacy simply consider sushi to be a must. Alongside the typical sushi ginger and of course soy sauce, wasabi is a typical addition to sushi. The green wasabi paste has a pleasant spiciness that is completely different to the spiciness of ginger and is therefore a wonderful addition. The mustard oils contained in wasabi are considered to be beneficial to health. The wasabi powder from our range is simply mixed with a little water to make the typical dip. The wasabi dip not only tastes good with sushi, but also with other dishes from Asian cuisine.

While the typical green wasabi dip that you know from sushi bars and sushi restaurants is made from a very specific horseradish, namely Japanese horseradish or water horseradish (see above), the organic horseradish paste available in our range consists of white horseradish, which is more popular in Europe, and gets its green color from spirulina. In terms of taste, this wasabi paste with shoyu, apple cider vinegar and apple syrup, which comes in a practical tube, is very similar to the original sushi horseradish.

Seaweed for sushi:

What would sushi be without the dark nori sheets used to wrap the tasty rolls? The wafer-thin sheets, of course available in the ALLBIO range, hold the rice and other fillings together and give the sushi shape. Nori does not refer to a specific type of seaweed, but is a term for sushi seaweed or the thin seaweed sheets used for sushi rolls. These are usually red algae, either Porphyra yezoensis or Porphyra tenera. Before the seaweed can be used for sushi, it must be roasted

The firm leaves of the wakame seaweed are often used as a salad (or as an ingredient in mixed salads), in vegetable dishes, but also as a soup garnish. Wakame is a brown seaweed. The pleasantly spicy taste makes this seaweed, which has the botanical name Undaria pinnatifida, a popular treat. Wakame is highly valued not only in Japan, but also in Korea.

Perhaps the biggest challenge when making your own sushi is rolling the sushi. What is sometimes more difficult than you think at first is easy to do with the stylish bamboo mats! Tips for Sushi at Home

Sushi simply needs a stylish atmosphere, because what would this exotic speciality be without all the beautiful elements that we associate with it and that make a little piece of Japan tangible? Not only is sushi always neatly and almost meditatively puristically prepared and presented in a straightforward but appealing way, but eating it with chopsticks is also part of the experience for many people. Our tip is to get some chopsticks for home and put a lot of effort into arranging the sushi plate so that the visual aspect gives you the right sushi feeling. But if you don't have much luck with rolling sushi at first and your first creations don't look perfect, don't despair - here too, it's all a question of practice and you'll soon be able to do it with ease!
