    Put the rice in a pot with cold water, wash thoroughly, drain and let it drain on a sieve. Bring the rice to the boil with 1 3/4 times the amount of fresh water and leave to swell for 10 minutes on a low heat. Remove from the heat and leave to swell for another 10 minutes. Process according to the recipe or season for sushi rice.
