What is Miso?
Miso comes from Japanese cuisine (although the predecessor of Japanese miso probably came from China - there was a very similar preparation there called Chiang in very ancient times). In the West, it is known to many through macrobiotic nutrition. Miso is a seasoning paste made from soybeans and/or grains (sometimes rice). The soybeans or grains are first soaked, then boiled or steamed and finally fermented. Traditionally, the miso is then given a longer maturing period. Depending on how long this is, you get a milder miso (shorter maturing period) or a very intensely spicy miso (long maturing period).
The seasoning paste obtained through the manufacturing process described above can be used in many different ways; you can compare it to a stock cube. Poured over hot water, the miso paste makes a tasty soup in no time at all. Miso can also be used to season sauces, stews and other dishes.
Like other fermented products, miso contains lactic acid bacteria and enzymes that can have a positive effect on the intestines and digestion. In addition, soy-based miso in particular contains a lot of plant protein.

Just like the barley miso mentioned above, this rice miso comes from the Onozaki factory, which produces according to traditional recipes. This organic miso also has a full flavor and is not pasteurized.

This organic miso is made from rice (brown rice) and soybeans. It is perfect for soups or sauces and has a balanced flavor. This organic miso is offered in a resealable bag.

This organic miso is a mild rice miso with a creamy consistency. It not only refines soups, purees, dressings, sauces and vegetables of all kinds, but can even be used for baking or as a spread on bread.
Organic Hatcho Miso
This organic miso based on soybeans and roasted barley flour has a wonderfully spicy aroma, which it owes to its long maturation period. It can be used as a basic seasoning for many dishes.
organic Mugi Miso
Mugi miso is based on barley and soybeans, with barley making up the larger portion (unlike the Hatcho miso mentioned above, for example, where soybeans make up the main portion). It is recommended for fish dishes, among other things, but of course also seasons rice dishes, vegetable stir-fries, stews and many other dishes very well.
