Bolognese sauce has a long history: During the Renaissance (14th-16th centuries), French braised meat ragouts were particularly popular in northern and central Italy. Ragù alla Bolognese, later also called Bolognese sauce, was created in the Bologna region during this period - a traditional accompaniment to macaroni, tagliatelle or spaghetti.
