Description

Couscous is whole grain durum wheat semolina and slightly milder than bulgur. It is delicious as a side dish for stir-fries, salads and stuffings and is particularly good in salads. Combined with dukkah, a traditional Middle Eastern spice mix, and cashews, it makes a wonderful mixture.

    Put 80 g of couscous mixture in a pot. Add 200 ml of boiling water, bring to the boil, put the lid on. Simmer over low heat for 15 minutes, stirring occasionally. Remove from the heat and let stand for 5 minutes. Add oil or ghee as desired. Season with salt.
