  • Preparation
    1. Line the base of a springform pan (ø 25 cm) with baking paper. If you are preparing it with fruit, drain it well. Collect the juice and use it for the fruit coating. 2. Knead the butter or margarine with the mixture for the base with your hands until you have a firm dough, similar to biscuit dough. (This requires a little patience.) Put the dough into the springform pan and use a tablespoon or your hands to press it evenly into a thin, smooth base. 3. For the cream topping, put the liquid cream, quark and cream mixture into a large, tall mixing bowl (warning: the mixture may splash). Mix with a hand mixer until the topping has a creamy consistency. Optionally, spread the fruit on the base. Then pour the cream into the pan and spread it evenly. Chill until the fruit coating is ready. 4. In a saucepan, mix the fruit juice and the mixture for the fruit coating with a whisk. Bring to the boil, stirring constantly. As soon as the fruit mixture has thickened, remove from the heat. Spread quickly and evenly over the cream. Spread carefully. 5. Place the cake in the fridge for at least 2 hours. Before serving, loosen and remove the edge of the springform pan using a knife. Tip: To be able to cut the cake pieces easily, dip the knife in hot water every now and then.
